For the veggie lover in your family – you don’t have to exclude them on hamburger night any longer – Invite them over for these delicious super special soy burgers – and enjoy!

Super Soy Burgers veggie_burger

Pan spray
1 1/2 cups soybeans — cooked and mashed
3/4 cup brown rice — cooked
1 egg
3 tablespoons soy sauce
5 scallion — minced
1 tablespoon nutritional yeast
1 tablespoon cornstarch
2 tablespoons dijon mustard
2 tablespoons fresh mixed herbs — chopped
salt & pepper — to taste

1. Preheat oven to 400 degrees.

2. In a large bowl, thoroughly combine all ingredients. Rest for 15 minutes.

3. Form mixture into 8 patties.
Place on cookie sheet and bake for 30 minutes, or until golden brown.

NOTES : Makes 8 4-ounce patties.
